Sabudhana Khichdi
Sabudhana khichdi is a Maharashtrian dish which is commonly used as a fasting food. It is very easy to make and tasty too.
Ingredients:
Sabudhana pearls: I cup (for soaking)
Potato: 1 no.
Green chilly: 1-2 no.s
Peanut powder: 1/4 cup
Curry leaves: 4-5 leaves
Cumin seeds (jeera): 1 tsp
Cooking oil: 1 tbsp
Salt to taste
Method:
1. Soak the sabudhana pearls in water overnight
2. Drain the water from soaked sabudhana pearls and mix it with peanut powder and salt.
3. Heat oil in a pan and splutter jeera seeds
4. Saute diced potato pieces in the oil along with curry leaves and chopped green chilly.
5. Once the potato is cooked add the sabudhana and mix well.
6. Close the lid and cook till the sabudhana pearls become translucent.
7. Switch off the flame and serve hot.
