Orappam: Easy recipe
Orappam is a sweet dish of Kerala. The new generation doesn't know about this dish. So I thought of sharing the recipe for those who wants to try old recipes which has been used by our forefathers. This is a very easy recipe.

Ingredients:
Rice Flour: 1 cup
Sugar: 1 cup
coconut milk: 3 cups
Fennel seed powder: 1 tsp
Cardamom powder: 1/2 tsp
Nutmeg powder: a pinch (optional)
Ghee: 2 tbsp
Coconut oil: 2 tbsp
Cashew nuts: As per the requirement
Preparation:
1. In a bowl mix 1 cup of rice flour and coconut milk
2. Add sugar to the flour mixture and mix well to a smooth batter
3. Mix in the fennel powder, cardamom powder and nutmeg powder
4. Take a thick bottom pan and add ghee
5. Fry cashew nuts and keep it aside
6. In the same ghee add the rice flour batter and stir continuously
7. Cook the rice flour and once it becomes thicker add the coconut oil
8. Cook till the flour comes out of the bottom of the vessel
9. Transfer it to a pan greased with coconut oil and bake in the oven at 180 degree C for 15 to 20
mins.
10. Wait for cooling and cut into pieces and serve.
Note: I have used brown sugar so colour is darker. It will be a lighter shade if you use normal sugar.
Jaggery also can be used instead of sugar.
