Uluvayila Thoran (Methi/ Fenugreek leaves Stir fry)
Methi leaves is a very healthy leafy vegetable which contains many nutrients. It can be used for iron deficiency. It offers lot of health benefits to the body. Here is an easy recipe which can be made by using methi leaves.
Ingredients:
Methi leaves: 1 bunch
Garlic: 4 pods
Onion: 1 No.
Green Chilly: 2 No.s
Turmeric Powder: 1/4 tsp
Coconut (grated): 1/4 to 1/2 cup
Egg: 1 No.
Cooking oil: 2 tsp
Mustard: 1/4 tsp
Salt to taste
Preparation:
1. Wash the leaves thoroughly with water
2. Chop the leaves to medium size
3. Chop the onion finely
4. Take a pan and pour oil and heat
5. Add mustard seeds and splutter
6. Add garlic, methi leaves, onion & green chilly
7. Add turmeric & salt
8. Close the lid and cook
9. Once the leaves are cooked add coconut and mix well
10. In the same pan keep the methi to one side and add egg and scramble it nicely.
11. Once the egg is cooked mix it with the leaves.
12. Close the lid and cook for 2 mins.
13. Turn off the flame and serve it with rice or roti.
Note: Egg is optional. Either coconut or egg can be used or both can be used as in the given recipe.
