Kerala style chicken curry with coconut milk
This is an easy chicken curry recipe. In Kerala, coconut is added to most of the dishes as it is available in plenty. In this recipe I used coconut oil and coconut milk to give a typical Kerala flavor to the dish. You may use any vegetable oil too.
Ingredients:
Chicken: 500g
Onion (chopped): 2 no.s
Ginger: 1 in piece
Garlic: 6-7 pods
Green chilly: 1 no.
Tomato (chopped): 1 no.
Chilly Powder: 1 tsp
Coriander Powder: 1.5 tsp
Turmeric Powder: 1/4 tsp
Pepper Powder: 1 tsp
Garam masala: 1 tsp
Coconut oil: 1- 1.5 tbsp
Coconut milk: 1/2 cup
Curry leaves: 6-8 no.s
Salt to taste
Preparation:
1. Marinate chicken with salt, turmeric powder and pepper powder.
2. In a pan heat coconut oil and saute onions, green chilly and curry leaves till onion turns
translucent. Add little salt while sauteing.
3. Add ginger and garlic paste and saute till raw smell goes away
4. Add chilly powder, coriander powder and garam masala and fry till oil comes out of masala
5. Add chopped tomatoes and saute till it becomes mushy
6. Add the marinated chicken and cook with lid on.
7. One the chicken is cooked well add coconut milk.
8. Cook in a medium heat for 1-2 minutes.
9. Switch off the flame and serve with rice or roti.
Note: I made a thick gravy, If you want more gravy, you may add little water or coconut milk.
